Karuizawa, blessed with purest water from Mt. Asama and cooler climate, provides a perfect environment for growing barley and maturing whisky. Karuizawa Whisky is a new Japanese whisky made of the DNA and credence Totsuka Sake Brewery Co., Ltd. has nurtured through its 370-year history since the Edo Period.
ABOUT THE EVENT
軽井沢ウイスキー株式会社は「メルシャン軽井沢ウイスキー蒸留所」のウイスキー・ディスティラーであった中里美行氏を工場長として招き、蒸留を開始します。かつて世界を魅了した技術を再び軽井沢の地で花開かせ、若い世代へとつなげていきます。
Karuizawa Whisky Co., Ltd. starts distilling Karuizawa Whisky, with Yoshiyuki Nakazato, former whisky distiller of Mercian Karuizawa Whisky Distillery, as Factory Manager. We will bring the once world-renowned craftsmanship back to life and pass it down to younger generations.

御代田の地でかつて造られていたいわゆる「オールド軽井沢ウイスキー」を飲んだとき、私はその美味しさに驚きました。工場が閉鎖したとき手放されたウイスキーが、そのあと時間をかけて熟成して美味しくなっていた。それを飲んだとき、これは文化だなとしみじみ感じると同時に、もったいない、ぜひ復活させて地元で愛される文化にしたいという思いがこみ上げてきました。
軽井沢には、素晴らしい自然環境や全国屈指の別荘地としての文化が育まれています。そこに新たに「軽井沢といえばウイスキーがあるよね」と言われるような、そして地元のみなさんに愛される文化を加えることができると信じています。
こうしたさまざまな背景を踏まえて、満を持して立ち上げたのが「新軽井沢ウイスキー」です。私たちが目指すのは、軽井沢から発進する世界で唯一無二のウイスキー。地の水、地の風を生かして、地元産の原料を中心に使用することで「軽井沢ウイスキー」にしか出せない味わいをこれから追求して行きます。

When I first tasted Old Karuizawa Whisky, a well-known brand once distilled in a western part of Karuizawa, Miyota, I instantly fell in love with its richness. Even though its distillery had already been closed, those whiskies relinquished back then grew far richer and more tasteful over time. As I myself drank it, I was fully convinced that it’s a culture, that it would be a huge loss should it be left as is, feeling compelled to revive and develop it into one of Karuizawa’s local treasures.
Karuizawa is widely known for its beautiful nature and also has culture as one of Japan’s best resorts. Now I firmly believe we can add a new charm there, so people will associate Karuizawa with whisky as well, and locals will be fond and proud of the new specialty of Karuizawa.
New Karuizawa Whisky is the brand we confidently launched in this context. We are committed to delivering you the world’s one and only whisky originated in Karuizawa. Harnessing the water and wind of Karuizawa, using as many local ingredients as possible, we are pursuing the flavor you can find only in Karuizawa Whisky.

2022年、軽井沢ウイスキー社は、日本初のシングルモルトウイスキーが生まれた軽井沢でウイスキーの製造を開始します。浅間山や八ヶ岳山麓の水を用い、原料の大麦は佐久地方などで地元農協や地元農家のみなさまと協力して栽培したものも使用する予定です。
Karuizawa Whisky Co., Ltd. goes into operation in 2022 in Karuizawa, the birthplace of Japan’s first single malt whisky. We are going to use fresh water from Mt. Asama and Mt. Yatsugatake, and local barley carefully raised in nearby districts together with Karuizawa farmers and cooperatives.

以前と同じ味はもちろんの事、それを超えるものを期待されていると感じている。
1995年に「メルシャン軽井沢ウイスキー蒸留所」に入所。当初は樽職人として採用されたが、オールマイティーに何でもこなし、蒸留所閉鎖時には最後の工場長として勤務。2012年にメルシャンを退社し、2022年より軽井沢ウイスキー社工場長に就任

Yoshiyuki Nakazato joined Mercian Karuizawa Whisky Distillery in 1995. Initially hired as a cooper, Nakazato worked all kinds of necessary operations across fields, and became the last factory manager upon the distillery’s closure. Nakazato left Mercian in 2012, and has been serving as Factory Manager of Karuizawa Whisky Co., Ltd. since 2022.

軽井沢ウイスキー蒸留所は北佐久郡軽井沢町大字発地に建設しました。
「軽井沢ウイスキー」を名乗るからには、やはり軽井沢の地で造りたい。
地元の人々から愛されるものを造るからには、絶対に軽井沢に蒸留所を建てるんだという信念を持ち続けました。
The Karuizawa Whisky Distillery was built in Hotchi, Karuizawa in Nagano Prefecture
and all of our Karuizawa Whisky will be made in the natural setting of Karuizawa.
It was very important to our team that Karuizawa Whisky is made in Karuizawa from local ingredients and water.

私たち軽井沢ウイスキー株式会社のブランドロゴデザインにはCASC(樽）をイメージした円形の中に、KaruizawaのKとWhiskyのWを象徴的にデザインしました。イカリのような形状で大地をしっかりと掴むようなWにKが結びつくように配置されたロゴデザインです。
「軽井沢の地で軽井沢ウイスキーを造る」
軽井沢とウイスキーの強い結びつきを体現するブランドデザインです。
The brand logo of Karuizawa Whisky Co., Ltd. symbolically places “K” for Karuizawa and “W” for Whisky within a round image of cask. The intertwined “K” and “W” suggest an image of anchoring firmly down to earth. Our brand promise is “Karuizawa Whisky, Made in Karuizawa.” It is a brand design embodying the strong connection between Karuizawa and whisky.
